I have been craving shrimp for a very long time – day dreaming about ceviche, shrimp scampi, and simple shrimp cocktail. I don’t know what it is about those little crisp and refreshing crustaceans – I could eat them in any season, at any time.

A lot of people cringe at the thought of eating seafood here in the land-locked Rocky Mountains. I don’t blame them. It takes a lot of effort to get fresh seafood here, and let’s face it – not everyone makes that effort (do we need to be reminded of the shrimp at the No. 1 Super Chinese Buffet?). But! There are some places that take pride in serving some super fresh seafood here in Fort Collins. While it’s not straight-from-the-sea fresh as if we lived right by the ocean, the quality is still delightful.
There are a few places where I can go to indulge that craving for shrimp and Fish is at the top of that list. One afternoon during a meeting I enjoyed the shrimp cocktail with a glass rimmed with super plump, cold, sweet shrimp. I was in heaven. Because of that, they make today’s “Eat Of The Week.”
